Domaine Trapet's roots in Gevrey-Chambertin stretch to the 1870s, when the family began assembling what would become one of the largest single-owner parcels of Le Chambertin (1.85 ha) — and it is the pomace of that Grand Cru fruit, harvested in 1996, that forms the raw material for this marc. Marc de Bourgogne is produced by distilling the pressed grape skins, seeds, and stems remaining after vinification; at Trapet, those solids come from Chambertin vines planted as early as 1919, grown on gravelly marl topsoil over limestone subsoil in the Côte de Nuits. The 1996 vintage in Burgundy was marked by cool, late-ripening conditions that concentrated acidity and phenolic structure — qualities that carry through even into the distillate's base character.
