Chabot, one of Armagnac's oldest négociant houses, built its reputation on sourcing from the sandy, iron-rich boulbènes soils of Bas-Armagnac — the appellation's most prized sub-zone, where low-fertility terrain forces deep vine roots and concentrates aromatic compounds in the spirit. The region's humid Atlantic influence slows evaporation in the cellar, extending maturation and deepening complexity over the mandatory decade-plus of aging required for the XO Superior designation.
Distillation follows the traditional continuous Armagnac alembic (alambic armagnacais), a single-pass column still unique to this appellation and legally distinct from Cognac's double-distillation — it runs at lower proof, preserving more congeners and raw distillate character. Aging proceeds in chêne noir (black oak, Quercus robur) casks sourced from the Monlezun forest in Gascony, a wood denser and more tannic than Limousin, imparting darker dried-fruit and spice extraction. The XO Superior is a multi-vintage blend bottled at 40% ABV without chill filtration.
What sets this expression apart within the Chabot range is the deliberate use of local Gascon oak rather than the Limousin or Tronçais barrels common across French spirits, anchoring the house style firmly in regional identity. Approachable now, with further integration possible over 3–5 years in bottle.
