SaleElena Walch has farmed the steep limestone hillsides of the Adige Valley since 1988, building a reputation for precision whites that capture the mineral signature of South Tyrol's alpine climate. This Sauvignon Blanc originates from vineyards planted on calcareous soils at 250–400 meters elevation, where cool nights and morning mists off the Adige River extend ripening and preserve acidity.
The fruit undergoes temperature-controlled fermentation in stainless steel, a technique that locks in the varietal's herbaceous and citrus character while maintaining the wine's natural freshness. No oak aging—the focus remains on terroir expression and the interplay between the limestone minerality and the wine's natural acidity.
This is a food-driven Sauvignon built for the kitchen rather than the glass alone. The 2023 vintage shows the hallmark green apple, white peach, and herbal notes typical of cool-climate Alto Adige, with a saline minerality that lingers on the finish. Drink now through 2026 for maximum freshness.
