Albert Bichot's family presence in Burgundy stretches to 1350, yet the structural decision that defines this wine is modern and deliberate: regional Bourgogne is vinified at the Beaune central winery using the same gravity-racking, non-interventionist protocol applied to the house's Grand Cru estates — a refusal to treat entry-level appellations as an afterthought. The Bourgogne Côte d'Or AOC draws fruit from partner growers across the limestone-and-clay corridor of the Côte de Beaune, where shallow topsoils over Jurassic limestone bedrock concentrate Chardonnay's tension and restrict vine vigour. Fermentation is split: approximately 80% stainless steel to preserve primary fruit and acidity, 20% in used French oak barrels (Tronçais and Allier, light toast) to add textural weight without imposing wood character. Aging runs 11–16 months, with the stainless component retaining the cool vintage's naturally high acidity intact. The 2021 growing season — marked by spring frost, disease pressure, and sharply reduced yields — produced Chardonnay of exceptional linear precision across Burgundy, and this cuvée reflects that: taut, mineral-driven, with the kind of structural clarity that over-ripe years cannot replicate.
