The vineyard's westerly aspect captures afternoon maritime influence, extending hang time and building acidity before harvest.
The fruit undergoes temperature-controlled fermentation in stainless steel, a deliberate choice that preserves aromatic volatility and mineral expression rather than pursuing oak-driven richness. No malolactic conversion is applied, maintaining crisp acidity and citrus definition. The wine rests on its lees for several months, building textural complexity without oxidative character.
