The valley's warm days and cool Andean nights preserve the natural perfume that defines the variety. Gato Negro Moscato is vinified off-dry, with fermentation arrested early to retain residual sugar, and bottled at low alcohol to keep the aromatic profile lifted rather than heavy. Stainless steel fermentation and cold stabilisation preserve the grape's primary floral and stone-fruit character without oak influence.
