When Philippe Colin split from the family estate Domaine Michel Colin-Déléger in 2004, he inherited not just vines but a deliberate philosophy: start white fermentation cold in thermoregulated stainless steel to lock in Chardonnay's floral lift, then transfer to barrel to complete fermentation and malolactic — a hybrid approach almost no Côte de Beaune peer replicates at this level. Les Vergers sits on Chassagne-Montrachet's Premier Cru mid-slope, where limestone-dominant soils with a calcareous clay substratum drain freely enough to concentrate fruit yet retain sufficient moisture to sustain acidity through warm years. The 2020 vintage, generous and round across the appellation, is kept honest here by that structural acidity. Aging runs 12–18 months in 228 L, 450 L, and 500 L French oak barrels sourced from five separate cooperages, a deliberate spread that prevents any single wood signature from dominating; lees stirring through that period adds texture without weight. A further 3–6 months of rest in stainless steel vat precedes light filtration and bottling, sealed with the domaine's signature 2–3 mm technical wax capsule above the cork — a house protocol since 2011 that no other Burgundy domaine has adopted at scale. The 2020 Les Vergers delivers lemon, green pear, Mandarin pith, and flint; drink now or cellar through 2030+.
