The decision reflects winemaker Anthony de Jager's conviction that Darling's cooler, wind-swept conditions produce a structurally different Chenin than warmer inland sites.
Darling's soils are predominantly decomposed granite over clay, retaining just enough moisture to moderate vine stress through the dry summer while the near-constant southerly sea breeze suppresses canopy temperatures and extends hang time — the result is grapes that accumulate phenolic ripeness without sacrificing natural acidity.
The wine is fermented in stainless steel to preserve primary fruit character and cool-climate tension, with no malolactic conversion, keeping the wine's inherent tartaric structure fully intact. Lees contact adds textural weight without obscuring the site's signature freshness.
