Cervaro della Sala originates from Castello della Sala, Antinori's estate perched on the limestone-rich plateau of Umbria's Orvieto zone, at 400+ meters elevation where diurnal temperature swings preserve acidity and mineral tension. The vineyard's calcareous clay soil imparts a distinctive saline minerality characteristic of the subregion.
The blend unites Chardonnay (80%) with Grechetto (20%), fermented in French oak barrels where malolactic conversion occurs, followed by 6 months sur lie aging. This extended contact with yeast sediment builds textural complexity and subtle butter-brioche undertones without masking the wine's core acidity. The oak integration remains restrained—a deliberate choice that allows limestone terroir to dominate the palate.
Cervaro della Sala stands as one of Italy's most consistent oak-aged white wines, balancing Burgundian technique with Umbrian minerality. Drinking beautifully from release through 8–10 years, the wine develops honeyed secondary notes while retaining its signature stone-fruit precision.
