When Antinori planted Chardonnay at Castello della Sala in the 1980s, it was a deliberate provocation — a Burgundian grape on an Umbrian estate historically devoted to Trebbiano and Grechetto. Bramito del Cervo is the estate's entry-level expression of that experiment, drawing fruit from the same volcanic tufa and clay soils that define the Orvieto Classico zone, at elevations around 250–450 metres above sea level. The altitude slows ripening and preserves natural acidity, while the tufa's mineral porosity imprints a chalky tension on the palate. Fermentation takes place in French oak barriques, with a portion of the wine undergoing malolactic conversion to soften the naturally high acidity without erasing it. The wine then rests on fine lees, building texture and a creamy mid-palate weight. What separates Bramito from peers at this price point is its direct lineage to the same volcanic terroir and winemaking philosophy as the flagship Cervaro della Sala, making it one of the most terroir-transparent Chardonnays produced in central Italy. Drink now through 3–4 years from vintage for peak freshness.
