When Rémi Leroy returned to his family's Côte des Bar estate in 2006 after completing a Masters in Oenology at Bordeaux, he made a deliberate choice to vinify each parcel individually — a Burgundian discipline almost unheard of among Aube growers — and to source his used barrels not from Champagne négociants but from Hubert Lamy in St-Aubin and Thomas Pico in Chablis. The 2020 Extra Brut draws from 9.5 hectares spread across Meurville, Bergères, and Fontaine, where Kimmeridgian clay-limestone soils — geologically continuous with Chablis — deliver a chiselled, saline mineral tension that reads closer to the Yonne than to the Marne Valley. Fermentation proceeds with indigenous yeasts in small stainless steel tanks and used 300–400 L Burgundian barrels; must is handled entirely by gravity to minimise SO₂ intervention, and full malolactic fermentation is completed before assemblage. The blend follows the estate's 70% Pinot Noir / 20% Chardonnay / 10% Meunier template, with 30% reserve wine drawn from a perpetual solera started in 2009, aged 18–20 months on lees, and finished at 3 g/L dosage. Bottled unfined and unfiltered. The 2020 vintage — a warm, generous year in the Aube — contributes ripe stone-fruit density that the Kimmeridgian backbone keeps taut; drink now through 2028.
