Judith Beck's pét-nat emerges from Burgenland's warm continental climate, where the winery sources fruit from low-lying vineyard parcels with sandy-loam soils and morning lake influence from Neusiedl. The wine captures the transgressive spirit of ancestral méthode: Zweigelt grapes harvested at lower ripeness are bottled mid-fermentation, trapping residual CO₂ without dosage or disgorgement. The result is deliberately unfiltered, retaining native yeast sediment and a cloudy pale-ruby hue that signals minimal intervention. Carbonation remains gentle and irregular—a hallmark of true pét-nat production—rather than the uniform fizz of charmat or traditional méthode. This is a wine that demands chilling and pouring with intention, rewarding patience with a textural complexity absent from industrial sparklers.
