Philipponnat's family connection to Aÿ vines dates to 1522, making the house's Pinot Noir obsession less a stylistic choice than a five-century inheritance. This Blanc de Noirs Extra Brut takes that conviction to its logical extreme: a single-varietal expression drawn from the house's south- and southeast-facing chalk and limestone slopes at roughly 170 m ASL above Mareuil-sur-Aÿ, where pure chalk subsoil delivers both relentless drainage and the mineral tension that defines the house signature.

The 2018 base is built on 69% Pinot Noir with the balance drawn from Chardonnay and Pinot Meunier, vinified from first-press cuvée juice only — no tailles — in a combination of stainless steel and neutral oak vessels, with partial malolactic fermentation preserving structural acidity while adding textural weight. A 26% reserve-wine component, maintained in used oak barrels via a perpetual solera refreshed annually under the 'rule of thirds,' threads continuity across decades into every bottle. Lees aging runs a minimum of 36 months at a constant 12°C cellar temperature — more than double the legal NV minimum.

What separates this from virtually every peer at the price is the Extra Brut dosage discipline applied to a Blanc de Noirs chassis: the low sugar addition forces the chalk minerality and red-fruit structure of the Pinot Noir to carry the wine entirely on their own terms.
