The vineyard sits at moderate elevation across south-facing slopes, capturing intense Mediterranean sun while maintaining acidity through diurnal temperature variation.
Paololeo employs extended maceration on native yeasts, allowing phenolic extraction that builds the wine's structural backbone. Fermentation occurs in temperature-controlled stainless steel, preserving aromatic precision while the wine ages 12 months in large Slavonian oak—neutral enough to let terroir dominate rather than impose vanilla or toast. Minimal intervention post-harvest: no fining, minimal sulfur addition.
The special signature here is the mineral salinity that volcanic clay imparts—a saline minerality that cuts through the wine's dark fruit density, preventing heaviness. This is not a fruit-forward Primitivo but a geological statement, where soil speaks louder than ripeness.
