When Max Schubert returned from Bordeaux in 1950, he borrowed the principle of barrel fermentation but replaced French oak with American hogsheads — a deliberate transgression that became the structural DNA of every Grange since. The 2021 is a multi-regional South Australian blend, anchored by Barossa Valley fruit (typically 77–82% of the final wine) drawn from ancient, phylloxera-free deep alluvial and sandy loam soils, with contributions from McLaren Vale, Coonawarra, and potentially Magill Estate — each district selected for fruit quality over geographic purity, the antithesis of single-terroir orthodoxy.
Vinification proceeds in small open-top stainless steel fermenters, with fermentation completed in 100% new American oak hogsheads — slightly larger than a Bordeaux barrique — using acclimatised pure yeast cultures. The wine then ages 18–20 months in those same new hogsheads before extended bottle maturation under natural cork. The blend is predominantly Shiraz (~93–98%) with a small Cabernet Sauvignon component (~2–7%), the Cabernet acting as a structural spine rather than a flavour statement.
What no peer does: Grange is the only wine heritage-listed by the South Australian National Trust, and the only New World wine to receive simultaneous 100-point scores from both Wine Spectator and Wine Advocate (2008 vintage). The 2021 vintage notes are not yet in the critical record within the brand library; given Penfolds' documented 40–50+ year cellaring ceiling, this Horse Edition is a long-horizon proposition.
