SaleDanimi's Vino Rosso originates in Irpinia, the volcanic heartland of Campania's eastern interior, where elevation between 400–600 meters and mineral-rich volcanic soils (ash and pumice from Mount Vesuvius) create the structural backbone for Aglianico. The vineyard aspect captures cool morning air and afternoon sun exposure, moderating ripeness while preserving acidity.
Production: Aglianico fruit undergoes temperature-controlled fermentation in stainless steel, followed by aging in neutral oak (avoiding new-wood dominance) for 12–18 months. This restraint allows terroir expression—the volcanic minerality and dark stone fruit—to remain central rather than masked by oak vanillin.
The special character lies in Irpinia's continental-influenced microclimate: nights cool enough to preserve phenolic ripeness without over-extraction, resulting in wines with grip and transparency rather than jammy extraction. Danimi's house style favors food-driven structure over fruit-forward opulence.
Drink 2024–2032. Best served at 16–17°C to unlock mid-palate mineral tension.
