Argiolas, founded in 1938 by Antonio Argiolas in Serdiana, built its reputation on rescuing indigenous Sardinian varieties from obscurity — Korem was created specifically to prove that Bovale Sardo could anchor a serious, age-worthy blend rather than disappear into anonymous co-operative vats. Serdiana sits in the Campidano plain southeast of Cagliari, where deep clay-limestone soils retain moisture through the island's brutal summer drought, moderating stress and preserving aromatic complexity in the thick-skinned Bovale grape. The blend pairs Bovale Sardo with Carignano and Cannonau, all farmed on low-yielding old vines. Vinification involves temperature-controlled fermentation followed by aging in French oak barriques, a regime that adds structural grip without masking the iron-tinged, dark-fruited character native to these varieties. What separates Korem from most Sardinian reds is its deliberate centering of Bovale — a grape so rarely bottled as a lead variety that most producers use it only as a blending component. The result is a wine of considerable density and savory depth, with the tannic architecture to reward 5–10 years of cellaring from a strong vintage.
