Fattoria Mantellassi farms this parcel using organic protocols. Sangiovese grapes are hand-harvested and fermented with native yeasts in open wooden vats, a technique that preserves the wine's mineral spine and allows extended skin contact (typically 15–20 days) without over-extraction. Aging occurs in large Slavonian oak casks for 12 months, permitting slow oxidative development while avoiding new-oak overlay.
The special signature here is the volcanic minerality—iron and slate notes that emerge from the clay-dominant soils—combined with the restraint of wild fermentation, which produces lower alcohol (typically 13.5–14%) and retains acidity that Maremma's warmer sites often lose.
