Montemajor's Fletris represents the appassimento tradition of Puglia's Salento peninsula, where Primitivo grapes are dried on mats or racks post-harvest to concentrate sugars and phenolics before fermentation. This I.G.T. expression sources from the region's characteristic limestone-clay soils, where intense Mediterranean sun and the Adriatic's moderating influence shape the vintage cycle.
The appassimento process—typically 2–4 weeks of controlled drying—elevates alcohol potential and deepens color extraction. Fermentation occurs in temperature-controlled stainless steel, preserving the varietal's dark-fruit character while the dried-grape concentration adds jammy density and glycerol-driven mouthfeel. No oak aging is standard for this tier, allowing the fruit and tannin structure to remain prominent.
Primitivo's thick skins and high phenolic load yield naturally full-bodied wines with ripe tannins; the appassimento method amplifies this, pushing alcohol toward 15–16% ABV and creating a wine built for immediate drinking or short cellaring. The transgression here is restraint—Montemajor avoids over-extraction, maintaining freshness beneath the dried-fruit weight.
