Apollonio Elfo Primitivo Salento I.G.P. Rosso

Founded in 1870 and now designated an Impresa Storica d'Italia, Apollonio has spent four generations refusing to abandon Salento's indigenous varieties in favour of international grapes — a deliberate stance that makes this Primitivo a direct expression of house philosophy rather than market convenience. The vineyards sit at roughly 100 metres above sea level in the Valle della Cupa near Monteroni di Lecce, where calcareous soils laced with clay retain just enough moisture to temper Salento's intense Mediterranean sun, while dual sea breezes from the Adriatic and Ionian coasts deliver natural acidity and disease resistance that keep the fruit focused rather than jammy. Fermentation proceeds at temperature-controlled 27–28 °C in large Slavonian oak vats with floating cap and pump-overs; entry-level reds receive 3–12 months of maturation in large Slavonian oak barrels, preserving Primitivo's dark-fruit density without heavy new-oak imprint. What sets this bottling apart within its IGP tier is Apollonio's insistence on oak aging across the entire range — a commitment the winery maintains at approximately one million litres per year — when most Puglian peers at this price point default to stainless steel. The current vintage delivers concentrated dried fig, sun-baked blackberry, and garrigue-inflected spice with the structural grip that calcareous-clay soils reliably produce; drink now through the near term with a 30-minute decant.
