The Rubicone ridge — a limestone escarpment running east-west through central Emilia-Romagna — has marked territorial boundaries since Roman times. Potente's appassimento exploits this geological spine: clay-limestone soils at 120–180 m elevation, where autumn winds accelerate ripening and drying of late-harvest fruit.
Technique: Sangiovese and Montepulciano grapes are partially dried on racks for 3–4 weeks post-harvest, concentrating sugars and phenolics before fermentation in temperature-controlled stainless steel. The wine then ages 12 months in large neutral oak, preserving the dried-fruit intensity without oak overlay. Residual sugar remains moderate (around 8–12 g/L), balancing the wine's natural alcohol elevation (14.5–15% ABV).
Special feature: Unlike Valpolicella's Amarone (which dries fruit for 4+ months in dedicated rooms), Rubicone's shorter appassimento window and warmer microclimate produce a leaner, more savory dried-fruit profile — less jammy, more mineral-driven.
