Daou Cabernet Sauvignon

Daou Vineyards sources fruit from the Adelaida District of Paso Robles, a high-elevation pocket (1,200–1,500 ft) defined by calcareous limestone soils and pronounced diurnal temperature swing. This Cabernet Sauvignon undergoes traditional maceration in temperature-controlled stainless steel, followed by 18 months in French oak (mix of new and neutral cooperage). The wine is unfiltered, retaining natural sediment and textural density. Daou's house style emphasizes phenolic ripeness balanced against acidity preservation—a signature of Paso Robles' cool nights moderating sugar accumulation. Drink 2024–2032.
