Edouard Delaunay sources fruit from the limestone-clay hillsides of Burgundy's Côte d'Or, where September harvest captures Pinot Noir at optimal phenolic ripeness. The winery employs whole-bunch fermentation in temperature-controlled open vats, a technique that preserves aromatic delicacy while building mid-palate structure through extended skin contact. Malolactic fermentation occurs in neutral oak, avoiding new-wood dominance and allowing terroir expression to remain central. The resulting wine carries the mineral precision typical of Côte d'Or limestone soils—a chalky minerality that frames red-fruit aromatics without overripe character. Drinking window: 2–6 years from vintage.
