Kaiken was founded in 2002 by Aurelio Montes of Chile's Montes winery, who crossed the Andes specifically to source Mendoza's oldest Malbec vines — a deliberate act of terroir-hunting that defines the Indomito range. Indomito, meaning "untamed" in Spanish, draws from high-altitude Mendoza vineyards where thin, well-drained soils over alluvial gravel and clay force deep root penetration and naturally restrict yields. Elevation above 900 metres amplifies diurnal temperature swings, preserving acidity while concentrating pigment and phenolic density in the thick-skinned Malbec berry. In the cellar, the wine undergoes extended maceration to extract deep colour and firm tannin structure, followed by aging in French oak to integrate and add spice complexity without overwhelming the varietal fruit. What sets Indomito apart at this price point is its deliberate pursuit of textural grip and dark-fruit concentration — a profile more commonly associated with Mendoza wines at twice the cost. The result is a wine built for medium-term cellaring of 3–5 years, though its density rewards decanting if opened young.
