Bin 389 earned its informal title — 'Baby Grange' — not through marketing but through a deliberate cooperage decision: every barrel used to mature this Cabernet Shiraz blend was first seasoned by Penfolds' Grange, transferring residual oak extract, tannin structure, and aromatic complexity that new wood could never replicate in the same way. It is a second-use philosophy turned into a signature technique, and no peer in Australian wine does it at this scale or with this degree of traceability.

The fruit draws primarily from Barossa Valley's ancient, deep alluvial and sandy loam soils — phylloxera-free ground that has never been replanted — producing Shiraz and Cabernet Sauvignon of exceptional concentration and low natural acidity. Kalimna, Penfolds' 290-hectare Barossa property with vines dating to the 1880s, anchors the blend's structural core.

Maturation in Grange-seasoned American oak hogsheads is the defining technical parameter: the barrels arrive pre-loaded with polymerised tannins and vanilla-inflected oak character, compressing the integration timeline and delivering mid-palate richness earlier than equivalent new-oak regimes. Multi-regional blending — Penfolds' deliberate counter to single-terroir orthodoxy — allows Chief Winemaker Peter Gago to select for fruit quality vintage by vintage rather than geographic consistency. The 1.5L magnum format slows oxygen ingress, extending the cellaring arc meaningfully beyond the standard 750ml trajectory. The Year of the Dragon 2024 presentation adds collector-edition packaging to a wine already built for the cellar.
