−14%When Rafael Cañizares founded Bodegas Volver in 2004, the explicit ambition was to prove that DO La Mancha — Spain's bulk-wine engine — could produce single-vineyard Tempranillo as site-specific as anything from Ribera del Duero. The proof is Finca Los Juncares.
This 29-hectare plot in Cuenca province sits at 700 m elevation on poor sandy soils over clay subsoil with limestone patches, dry-farmed and organically managed with a punishing 242 mm average annual rainfall. The altitude delivers the diurnal swings — up to 18–20°C between day and night — that preserve acidity in fruit ripened under intense continental heat. Vines planted in 1957 push roots deep into the subsoil for water, yielding small, concentrated berries.
In the cellar, hand-harvested grapes are sorted on a selection table before primary fermentation in open-top stainless steel tanks at ~28°C with indigenous yeast. Malolactic fermentation is completed in barrel, followed by 14–15 months in new and second-fill French oak barriques (225 L). The wine is bottled unfiltered at approximately 15% ABV.
What sets this apart: it is one of the only unfiltered, single-vineyard Tempranillos from La Mancha aged with in-barrel malolactic — a Bordeaux-influenced technique almost unheard of in this DO. The current vintage shows the hallmark of slow ripening under altitude-moderated heat: dense fruit concentration alongside structural acidity that extends the drinking window well beyond what La Mancha's reputation would suggest.
