Maipo's upper reaches deliver the conditions that define the valley's reputation: deep alluvial gravel over clay subsoils, Andean snowmelt irrigation, and a wide diurnal temperature swing that preserves acidity while allowing full phenolic development in Cabernet Sauvignon. Vinification follows the 20 Barrels tier protocol: French oak barrels for approximately 17 months, a regime long enough to integrate tannin and add structural complexity without overwhelming the site's natural cassis and dried herb character. Cono Sur's 1,246 hectares across ten owned estates are managed under certified organic and sustainability programs — geese for pest management, drip irrigation, solar energy — giving the fruit a cleaner, less-intervened baseline before oak contact. The special feature here is the producer's identity itself: a house whose entire premium infrastructure was engineered for Pinot Noir applying that same precision to Maipo Cabernet, with no commercial pressure to conform to a house red style. Drink now through 4–6 years for primary fruit expression; structured enough to reward short cellaring.
