Founded in 1880, Maison Joseph Drouhin has farmed its Côte de Beaune holdings organically and biodynamically since Philippe Drouhin began the conversion in 1990 — a commitment that earned ECOCERT certification for the 2009 vintage across a 100-hectare estate, extraordinary for a négociant-domaine of this scale. Savigny-lès-Beaune sits on the northern edge of Beaune, its village parcels planted on clay-limestone soils with a northeast-to-southeast aspect, producing Pinot Noir of notably cooler aromatic character than its southern neighbours. Vinification is conducted in small open vats with pigeage and pumping-over across a 2–3 week maceration, using exclusively indigenous yeasts; total destemming is applied at village level, preserving fruit clarity over structural complexity. Élevage runs 12–18 months in 228L or 300L French high-forest oak barrels at 15–25% new wood, seasoned approximately three years before coopering — a deliberate restraint that keeps oak as texture rather than flavour. What separates this cuvée from peers is Drouhin's strict portfolio discipline: no Pinot Noir outside Burgundy, no blending across appellations, and winemaking decisions driven by tasting evaluation rather than fixed protocol. The 2015 vintage delivered phenolically ripe, generous fruit across the Côte de Beaune; this village-level wine is approachable now but carries the structural integrity for 5–8 further years of development.
