Masserie Maime sits on the limestone plateau of Salento's Itria Valley, where Antinori's southern Puglia estate captures the region's mineral intensity and sun-driven ripeness. The vineyard's elevated position (90–120 metres) and calcareous soils moderate the Mediterranean heat, preserving acidity in fruit that would otherwise flatten at sea level.
The blend anchors on Negroamaro, fermented in temperature-controlled stainless steel to retain varietal character, with Malvasia Nera and Primitivo adding textural depth and spice. No new oak; aging occurs in large neutral cask, allowing the wine's structural tannins—derived from skin contact and seed ripeness—to integrate without oak overlay. This restraint is deliberate: Antinori's house style privileges terroir expression over winemaking signature.
The special feature lies in Salento's limestone geology, which imparts a saline minerality uncommon in southern Italian reds. Where Negroamaro from clay-rich sites tends toward jammy extraction, Masserie Maime's calcareous substrate channels the variety toward dried cherry, garrigue, and a persistent white-pepper finish.
Current vintage shows immediate drinkability; the wine's medium tannin and acidity structure suggest a 5–8 year window before tertiary notes emerge.
