Torcicoda represents Antinori's interpretation of Salento's sun-baked peninsula, where limestone bedrock and Adriatic maritime influence shape the character of indigenous varieties. The vineyard sits at modest elevation across the Lecce province, where calcareous soils and diurnal temperature swings preserve acidity in ripe fruit.
The blend centers on Negroamaro, fermented in temperature-controlled stainless steel to retain varietal definition, then aged 12 months in French oak (mix of new and neutral vessels) to integrate structure without overwhelming the wine's dark-fruit core. Malolactic fermentation occurs post-harvest, softening the tannin profile typical of this southern Italian variety.
What distinguishes Torcicoda is its refusal of over-extraction: the wine maintains the transparency of Salento's mineral limestone signature rather than pursuing the jammy density common in mass-market Negroamaro. The oak sits in service of the fruit, not dominance.
Drink 2024–2030 for optimal balance between primary fruit intensity and tertiary oak integration.
