SaleI Veroni's Vin Santo del Chianti Rufina Riserva originates from the easternmost subzone of Chianti, where clay-limestone soils and afternoon thermal winds off the Arno valley concentrate Trebbiano and Malvasia grapes into the region's most structured passito wines.
The fruit undergoes traditional passito drying on wooden racks for 3–4 months, concentrating sugars and phenolics. Fermentation proceeds in glass demijohns (caratelli)—the signature vessel of Vin Santo production—where wild yeasts and ambient microflora drive a slow, oxidative transformation over minimum 3 years aging in glass, with periodic topping to manage the flor layer. This extended maturation in inert glass preserves the wine's oxidative complexity while preventing oak intrusion.
The riserva designation demands extended aging and lower residual sugar than standard Vin Santo, yielding a drier, more austere profile. The 375 ml format suits the wine's concentrated intensity and traditional serving custom of small pours with almond biscuits.
