When Tammawit 'Tiger' Limlertcharoenwanich founded Onson in 2020 in Sakon Nakhon Province, he deliberately rejected every conventional Thai white spirit base — rice, molasses, sugarcane — and revived a pre-modern ingredient: caramelized coconut flower sap (nam wan dok maphrao), sourced additive-free from traditional nectar farms in the Samut Songkhram region of the central plains. That caramelization step, applied to the raw sap before fermentation, is the technical crux: it drives Maillard-derived depth and natural sweetness into the wash before a single drop is distilled.
Fermentation proceeds under ambient, uncontrolled conditions in food-grade containers — no climate control, no documented commercial yeast — at a concrete warehouse distillery on the outskirts of Sakon Nakhon city, set among the rice paddies and rolling hills of the Mekong basin's western edge. The still is wood-fire heated, mandated by a Thai government community distillery license that caps electrical draw at five horsepower. The result is bottled unaged and clear: zero wood contact, no fining or filtration details confirmed.
The defining transgression: Onson's floral, delicately sweet profile reads unmistakably gin-adjacent, yet Thai excise law prohibits labeling it as gin — it is, legally and categorically, lao khao, produced in micro-batches of only a few thousand bottles per year under one of Thailand's most restrictive craft licenses.
