David Stewart MBE, the Malt Master who invented cask finishing in the 1980s–90s and commercialised it with the 1993 DoubleWood, turned his attention to Spanish oak as a distinct finishing vessel — not Oloroso sherry butts, which are already central to the Balvenie portfolio, but the oak itself, imparting a different tannin structure and aromatic register. The whisky is distilled at Dufftown, Speyside, using soft water drawn from the Robbie Dhu Springs and partly floor-malted barley grown on Balvenie Mains farm — lightly peated to ~4 ppm via hand-cut Speyside peat, a subtler, sweeter smoke than Islay. Seventeen years of maturation in ex-bourbon American oak barrels builds the distillery's characteristic honeyed, creamy base — a texture encouraged by fermentation in Douglas fir wooden washbacks over 64–68 hours — before the whisky transfers into Spanish oak casks for finishing, adding dried fruit depth, vanilla-spice, and a firmer tannic grip absent in the DoubleWood or Caribbean Cask expressions. What separates this release within the Balvenie range is the use of Spanish oak as a primary finishing wood rather than a wine-seasoned vessel: the oak character itself, not a residual wine influence, is the point. Bottled at 43% ABV, chill-filtered per core-range practice, with Robbie Dhu spring water used for dilution.
