When J & G Grant reverted from steam heating back to direct gas-fired copper pot stills within weeks of trialling the change in the early 1980s, the decision was unambiguous: steam fundamentally hollowed out the spirit. That commitment to Maillard-driven caramelisation and oily new-make density is what makes three decades of maturation possible without the whisky becoming merely delicate. Rechlerich Farm, Ballindalloch — north-western slopes of Ben Rinnes at roughly 244 m elevation — supplies process water from Ben Rinnes springs, soft and lightly mineral, feeding a distillation regime built around slow runs, generous boil-ball reflux, and a spirit cut at approximately 68% ABV. New make enters cask at 63.5% ABV into Spanish Oloroso sherry butts sourced exclusively from José Miguel Martín, maturing in traditional dunnage warehouses with earth floors and stone walls — conditions that moderate temperature swing and slow the interaction between spirit and wood across three decades. At 30 years, the cask regime has had time to deposit successive layers of dried fig, fruitcake spice, roasted walnut, and dark chocolate without the spirit surrendering its structural weight. The label reads 'Single Highland Malt' — the historical designation used before Speyside was formally separated from the Highland region — a deliberate archival choice that distinguishes older Grant family bottlings from the modern category language. Bottled at 43% ABV, natural colour, no chill-filtration: the full texture of three decades in sherry oak is preserved intact.
