Sliabh Liag Distillers, founded in 2015 and drawing on the wild Atlantic coastline of County Donegal, sources its whiskey from the northwest Irish tradition where peated malt was historically common before blended styles homogenised the category.

The Midnight Silkie is a blended Irish whiskey combining peated malt whiskey with grain whiskey, all triple-distilled in the Irish manner. Maturation draws on a combination of seasoned bourbon barrels and oloroso sherry casks, the sherry component driving dried fruit and spice while the bourbon wood contributes vanilla and soft caramel. The peat level is deliberate but restrained — enough to mark the whiskey as distinctly Donegal without overwhelming the grain's natural sweetness.
