Kavalan 15th Anniversary Vintage 2009 ex-bourbon Cask (750 ml)

When T.T. Lee founded Kavalan in 2005, the received wisdom was that great single malt demanded cold, slow-maturing air. The spirit filled into this ex-bourbon cask in 2009 — drawn from Kavalan's earliest production years — became part of the evidence that dismantled that assumption entirely. Yuan Shan Distillery sits at the intersection of cold air descending from the Xueshan (Snow Mountain) Range and humid Pacific Ocean breezes, with warehouse temperatures swinging from 24°C on lower floors to 42°C on upper floors in summer, no climate control applied. Snow Mountain spring water, filtered through gravel and sand, feeds the mash. That thermal violence drives wood extraction at a pace unmatched in cooler climates: four Taiwanese years broadly equate to 10–15 Scottish ones. The mash bill is 100% unpeated malted barley; fermentation runs 60–72 hours across a multi-stage cycle including a dedicated 'fruit producer' yeast strain for ester development, followed by a lactic round; double distillation in Forsyths copper pot stills with a spirit cut narrowed to 65–55% ABV for added complexity. Maturation in ex-bourbon American oak channels the distillery's tropical-fruit and vanilla character without sherry-cask interference — the purest read of Kavalan's house DNA. Bottled at natural cask strength, non-chill-filtered, as a 15th Anniversary single-cask release from 2009 spirit, this expression captures the distillery's founding-era production before the 2016 capacity expansion.
