Nikka MIYAGIKYO Discovery Aromatic Yeast (700 ml)

The Miyagikyo Discovery Series exists because Nikka's blenders operate under a structural constraint: Japanese regulations prohibit distillate exchange between competing groups, so Masataka Taketsuru built Miyagikyo in 1969 specifically to give his blending team a second, contrasting voice. The Discovery releases turn that in-house laboratory into a public experiment — isolating single production variables to expose what the distillery can do beyond its standard expression.

Miyagikyo sits in a forested valley west of Sendai, fed by the Hirose and Nikkawa rivers drawing snowmelt from the Zao Mountain Range. The water is among the softest of any Japanese distillery, and the humid, cool forest microclimate slows maturation, preserving delicate ester compounds that harder water or warmer warehouses would suppress.

This Aromatic Yeast expression isolates fermentation as the variable: specific aromatic yeast strains are selected to amplify ester production during fermentation in Miyagikyo's 22 stainless-steel washbacks, before distillation through the distillery's characteristic bulging-neck, upward-lyne-arm pot stills with steam heating at 130°C — a configuration engineered for maximum reflux and a lighter, fruit-forward spirit.

What is unusual here is the deliberate foregrounding of yeast as a flavour architect in a category that rarely names fermentation as the headline: this is a single-variable release designed to demonstrate that Miyagikyo's floral register is not solely a function of still geometry.

As a non-vintage expression, it reflects Nikka's house philosophy of consistency over year-to-year variation; drink now through the medium term.
