The A Night On Earth In Jerez De La Frontera release belongs to The Macallan's artist-collaboration series, anchoring its storytelling directly to Jerez — the Andalusian city whose Oloroso-seasoned European oak casks are the structural foundation of the entire Macallan house style. That relationship is not decorative: Macallan operates one of whisky's most vertically integrated cask programmes, sourcing Spanish oak from Galicia, Asturias, and Cantabria, air-drying staves for approximately one year, coopering them in Spain, and seasoning the finished casks in Jerez for 18 months with Oloroso sherry before a single drop of spirit enters. The new make itself is engineered for this wood: squat copper pot spirit stills of just 3,900 litres — craft-distillery scale — limit copper-vapour contact and produce a deliberately heavy, oily spirit capable of absorbing decades of sherry-cask influence. Distilled at Easter Elchies Estate on the north-west slopes of the River Spey near Craigellachie, using on-site spring water and unpeated malted barley, the spirit matures across 51 on-site warehouses in 100% ex-Oloroso sherry-seasoned European oak. What distinguishes this expression within the Macallan portfolio is its dual function: a collectible artist release that simultaneously documents the Jerez origin story most Speyside producers outsource entirely.
