Octomore is the expression that inverts every assumption about peat: distilled at 150–309+ ppm phenol — the highest peating level in commercial Scotch whisky — yet the Harvey brothers' 1881 stillhouse on the western shore of Loch Indaal was built for a completely different purpose. The 6-metre, narrow-necked spirit stills maximise copper reflux, producing a new make of unusual cleanliness that carries peat as texture and smoke rather than medicinal weight. The 14.2 designation signals the second cask variant of the fourteenth edition, where the distillery's deliberate wine-cask finishing regime — drawn from a diverse policy including French wine and fortified wine oak — is the defining technical variable, layering fruit-derived tannin and oxidative complexity over the phenolic core. Reduction to bottling strength uses water from the Octomore Farm spring, flowing through ancient Lewisian gneiss rock on the Rhinns, a high-silica source unique to this site. Matured entirely on Islay in flat, brick-built dunnage warehouses under Atlantic-maritime conditions — Gulf Stream humidity slowing extraction and preserving coastal salinity. No chill-filtration, no caramel colouring. What makes 14.2 categorically unusual: it achieves the world's highest commercial peat level while the wine-cask finish pulls the spirit toward dried fruit and spice, a structural tension no peer in the heavily peated category attempts at this scale.
