The Harvest Irish Whiskey (700 ml)

Walsh Whiskey, founded in 1999 by Bernard and Rosemary Walsh in County Carlow and now distilling in Royal Oak, Co. Wexford, built The Irishman range to champion the near-extinct Irish pot still style at a time when blended grain dominated the market. The Harvest is their entry expression, deliberately anchored in that philosophy. The liquid is a blend of single malt and single pot still Irish whiskey, triple-distilled in copper pot stills — the triple distillation stripping heavier congeners and producing the characteristically lighter, approachable spirit body Ireland is known for. Maturation draws on a combination of ex-bourbon American oak casks and Oloroso sherry-seasoned casks, the bourbon wood contributing vanilla and toasted grain while the sherry influence layers dried fruit and a faint nuttiness. What sets The Harvest apart within the crowded entry-tier Irish whiskey field is its insistence on 100% pot still and malt distillates — no cheaper column-distilled grain spirit is blended in, a commercial concession most competitors at this price point make freely. Bottled at 40% ABV, it is approachable now and not designed for extended cellaring.
