When Shinjirō Torii lit the stills at Yamazaki in 1923 — defying the orthodoxy that whisky could only be made in Scotland — he chose a site already consecrated by water: the confluence of the Katsura, Uji, and Kizu rivers, whose aquifers had supplied tea master Sen no Rikyū four centuries earlier. This 100th Anniversary Limited Edition of Yamazaki 12 commemorates that founding moment with the same single malt that anchors the house's identity.

The distillery sits at roughly 25 m elevation in a warm, humid microclimate at the southwestern fringe of Kyoto — conditions that accelerate maturation and deepen fruit extraction compared to highland Scotch equivalents. Soft river-fed water shapes a round, low-mineral new make that takes oak influence readily.

Production follows Suntory's 'Tsukuriwake' philosophy: fermentation runs 64–80 hours across both Oregon pine wooden washbacks and stainless-steel vessels using multiple yeast strains, generating a spectrum of fruity and estery profiles. Distillation passes through pot stills of deliberately varied shapes — squat, tall, ball-necked — with both worm-tub and shell-and-tube condensers to multiply stylistic options before blending. The 12-year maturation draws primarily from American oak ex-bourbon casks, with sherry cask and trace Mizunara oak components — the latter imparting sandalwood and incense notes found in no other whisky-producing tradition.

What distinguishes this release from the standard Yamazaki 12 is its commemorative status: bottled to mark the centennial of Japan's first malt whisky distillery, it is a limited, non-recurring expression of a foundational age statement. Drink now through 2030.
