−3%When Masataka Taketsuru founded Yoichi in 1934 on Hokkaido's northwest coast, he deliberately built a second distillery in 1969 at Miyagikyo — not for scale, but because Japanese regulations forbid distillate exchange between competing groups, forcing him to engineer his own full blending spectrum in-house. Nikka Days is the expression that draws most directly on that architectural decision. Yoichi sits at the base of the Shakotan Peninsula, cooled by Sea of Japan maritime air and river fog from snowmelt off the Yoichi River; its direct coal-fired pot stills with downward lyne arms — one of the last such operations on earth — retain heavier congeners and a faint coastal smokiness. Miyagikyo, set in a forested valley fed by the Hirose and Nikkawa rivers from the Zao Mountain Range, uses steam-heated pot stills with bulging necks and upward lyne arms that promote reflux, yielding a lighter, fruit-forward spirit from water ranked among the softest of any Japanese distillery. Days blends these two malt profiles with Coffey grain distilled on Glasgow-built continuous stills, bottled at 40% ABV with standard chill-filtration for clarity and consistency. What sets Days apart within the Nikka range is its explicit orientation toward drinkability over complexity — a deliberate inversion of the From the Barrel philosophy — making it the only Nikka blend engineered specifically around low-dilution, high-frequency consumption.
