Our Lambay Whiskey Single Malt is complex and rich, it needs more time for the taste notes to marry. With time, all molecules react together and produce our unique spirit. Our Master Blender controls this complex stage of evolution by consistent testing and we use several fills of cognac casks for this process. These fillings allow a different kind of extraction from each cognac cask and present a good balance between the Irish whiskey taste and the rich cognac flavours. All our cognac casks have been hand-selected for their rich and complex notes, especially prepared for our whiskey fills to adapt to our blend. Our passion is to play with this complexity to reach the optimum balance. This is our crafted approach to finishing.
