When Aurora Brewing Ltd. lit the stills at Henderson Park, Thurso on Burns Night 2013, they chose to revive a distillery silent for over 150 years — and to do so without a single automated step from milling through on-site bottling, a discipline almost no Scottish distillery of any scale maintains today. Northland is the expression that most directly channels Caithness itself: the cask selection — ex-Islay refill American oak quarter casks — is the defining technical decision, threading a ghost of coastal peat smoke through an otherwise unpeated spirit without Wolfburn ever peating its own barley for this expression. Process water is drawn from the Wolf Burn, a spring-fed stream filtered through Caithness flagstone, cold and mineral-laden, feeding a spirit still with a reflux bowl that deliberately drives copper contact and a lighter, fruitier house character. Fermentation is intentionally long across all Wolfburn production to build biscuity, orchard-fruit esters before distillation. Maturation occurs in traditional dunnage warehouses on-site — clay floors, low ceilings, maximum three casks stacked — where the proximity to the north coast imparts a mild maritime salinity. Bottled at 46% ABV, non-chill filtered, natural colour. What sets Northland apart within the core range is borrowed smoke: the ex-Islay refill casks carry residual phenolic memory into a distillery that otherwise produces zero-peat spirit, creating a layered coastal character no other Wolfburn expression replicates.
