Kavalan Moscatel Sherry Single Cask Whisky (700 ml)

When T.T. Lee founded Yuan Shan Distillery in Yuanshan Township in 2005, the operating thesis was deliberately provocative: subtropical heat would do in years what Scotland takes decades to achieve. The Moscatel Sherry Single Cask is the sharpest proof of that wager.

The distillery sits at the collision of cold air descending from the Xueshan (Snow Mountain) Range — peak 3,886 m — and humid Pacific Ocean breezes, with warehouse temperatures swinging from 24°C on lower floors to 42°C on upper floors, entirely without air-conditioning. Snow Mountain spring water, filtered through gravel and sand, builds the new-make's signature creaminess before a drop of wood influence begins.

Spirit is double-distilled in Forsyths copper pot stills (12,000-litre wash / 7,000-litre spirit), with the cut narrowed to 65–55% ABV to maximise ester complexity. A multi-stage fermentation — including a dedicated 'fruit producer' yeast cycle — loads the new-make with tropical esters before the Moscatel sherry cask layers dried fig, orange peel, and oxidative nuttiness over that base. Bottled at natural cask strength, non-chill-filtered as a single barrel under the Solist programme.

The Moscatel cask is the rarest sherry wood in the Solist lineup — distinct from the house's Oloroso, PX, and Amontillado expressions — delivering a lighter, floral-oxidative sherry register against Yilan's irreducibly tropical core. In January 2010, a Kavalan expression beat three Scotch whiskies blind in Leith on Burns Night; this single cask carries that same disruptive DNA.
