Jack Daniel's Honey begins where Old No. 7 ends — with new-make spirit gravity-fed through 10-foot vats of handmade sugar maple charcoal over 3–5 days at Cave Spring Hollow, Lynchburg, Tennessee. That Lincoln County Process mellowing, originally taught to Jack Daniel by Nathan 'Nearest' Green, strips harsh congeners before a single day of barrel contact, producing the velvety base that makes this expression work as a liqueur rather than a cloying novelty.
The distillery's water source — a limestone cave spring locked at 56°F year-round — filters iron from the water while contributing calcium and magnesium, giving the spirit a clean, mineral-neutral canvas. The underlying Tennessee Whiskey is built on an 80% corn / 12% malted barley / 8% rye mash bill, fermented in open-top cypress vats using a sour mash backset, then distilled through a 100-foot copper column still to approximately 140 proof before charcoal mellowing and barrel entry at 125 proof in new charred American white oak.
What separates this from standard honey liqueurs is the structural integrity of the base spirit: the Lincoln County Process delivers a smoothness that allows the honey to integrate rather than dominate, preserving the distillery's signature caramel and toasted-oak backbone. Bottled at 35% ABV, it sits lower than Old No. 7's 40%, making it a deliberate departure from the flagship's proof point without sacrificing the Tennessee Whiskey character beneath.
