The distillery's limestone cave spring — a constant 56°F (13°C), iron-free — supplies water that carries calcium and magnesium without the metallic interference that iron introduces to fermentation. New-make is distilled to 140 proof on a 100-foot copper column still with doubler, reducing sulfur compounds via copper contact, then entered into 100% new charred American white oak barrels at 125 proof across multi-storey rickhouses where Tennessee's seasonal temperature swings drive active wood extraction. The 80% corn / 12% malted barley / 8% rye mash bill and sour mash backset fermentation establish the sweet-forward caramel and banana-bread baseline.
