When J & G Grant briefly switched to steam heating in the early 1980s, the spirit lost its character so decisively that the distillery reverted to direct gas-fired pot stills within weeks — a decision that defines every drop of Glenfarclas to this day. That direct flame drives Maillard-reaction caramelisation in the still charge, producing an oily, robust new make that demands — and rewards — long sherry wood contact.
The distillery sits at the foot of Ben Rinnes, Ballindalloch, at roughly 244 m elevation, drawing process water from the mountain's own springs: soft, lightly mineral, and consistent across decades. Unpeated malted barley is fermented for an average of ~106 hours in closed stainless-steel washbacks, building ester complexity before slow distillation through large-boil-ball wash stills of ~29,600 L, with shell-and-tube condensers preserving weight in the spirit.
The 15 YO matures in ~60% first- and second-fill Spanish Oloroso sherry butts, ~40% third- and fourth-fill, all sourced exclusively from José Miguel Martín, held in traditional dunnage warehouses with earth floors and stone walls. It is bottled at 46% ABV, no chill-filtration, no caramel addition — the full texture of the cask intact. Where most Speyside distilleries have migrated toward NAS releases, Glenfarclas maintains an unbroken age-stated ladder from 10 to 40 years, making the 15 YO a precisely positioned, transparent statement of mid-maturity sherry integration.
