Production follows traditional methods: mature blue agave is pit-roasted in earthen ovens, crushed, fermented with native yeasts, and distilled in copper stills to capture the cooked agave and mineral notes inherent to the terroir. This unaged expression—a blanco—showcases the distillery's commitment to expressing agave and soil without the softening effect of barrel maturation, making it a direct window into Jalisco lowland character.
