This sake comes from the Noguchi Naohiko Sake Institute, led by one of Japan’s most legendary master brewers (Toji), Noguchi Naohiko—often referred to as “The God of Sake Brewing.”
The use of the traditional Yamahai method sets this sake apart. Unlike modern fermentation, Yamahai allows natural lactic acid development, creating a sake with greater depth, texture, and complexity.
